15 - 1 teaspoon grated fresh ginger
16 - 1 small garlic clove, minced

# Directions:
01 - In a medium saucepan, bring water and salt to a boil. Add pearl couscous, reduce heat to low, and simmer uncovered for 8 to 10 minutes, stirring occasionally, until couscous is tender and water is absorbed. Drain any excess liquid and allow to cool slightly.
02 - In a small bowl, whisk together soy sauce, toasted sesame oil, rice vinegar, honey, lime juice, grated ginger, minced garlic, and Sriracha until thoroughly combined.
03 - In a large bowl, combine cooled couscous, shredded rotisserie chicken, diced cucumber, shredded carrots, sliced scallions, chopped cilantro, and fresh mint.
04 - Pour the sesame-soy dressing over the salad mixture and toss thoroughly to ensure even coating of all ingredients.
